Coat the fillets with a tempura batter or breadcrumbs (or both!) and throw into the deep-fryer for a crispy, golden exterior and a juicy, flaky interior.

Alternatively, for a healthier recipe, pan grill the fillet with some herbs and finish with a squeeze of lemon juice.
